  • Grands refrigerated biscuits - To get the right size crust you will need the regular Grands biscuits, not the smaller ones.
  • Sausage gravy - You can use your favorite brand or make your own from scratch. I've used this Turkey Sausage Gravy recipe.
  • Unsalted butter - This is used for sautéing the eggs. If you only have salted butter, just adjust the amount of salt you add to the eggs.
  • Salt and pepper - Season the scrambled eggs to suit your taste buds.
  • Large eggs - Use fresh eggs for best results.
  • Milk - Whole milk or 2% is recommended for making scrambled eggs.
  • Shredded Colby cheese -Use a good quality cheese for maximum flavor. I've found that I get the best melt when I make my own.
  • Bacon - Use thick-cut bacon, if possible. It will add more flavor and make the pizza more filling.
  • Green onion for garnish, you can also top your pizza with regular diced onions.

  1. Spray a large baking sheet with cooking spray. Open biscuit cans and arrange biscuit dough on the prepared baking sheet. Press with your hand until they form one large crust. Bake in the oven for 5-7 minutes until the edges start getting golden brown.
  2. Meanwhile, in a medium bowl, whisk together eggs as detailed in the recipe card below.
  3. Take the crust out, spread the gravy on top evenly then top with scrambled eggs.
  4. Top the eggs with the cheese, and then sprinkle the bacon on top evenly. Return to oven and bake for another 6-7 minutes. Serve garnished with some chopped green onions.

💡 Amira's Tips

  • Don't forget to pre-bake the crust this ensures that the crust is fully cooked and not soggy. Just bake it until it starts to rise and get a little golden on the bottom, then add your toppings and finish baking.
  • Layer your ingredients starting with the sausage gravy, then the scrambled eggs, followed by the remaining toppings. This ensures every bite is as delicious as the last.
  • Feel free to swap out or add ingredients based on your preferences. Consider adding mushrooms, bell peppers, or even diced tomatoes for an extra veggie boost.

🧺 Storage

Storage - To keep your breakfast pizza tasting fresh, it's best enjoyed immediately after baking. However, if you find yourself with leftovers, they can be stored in the refrigerator for up to 2 days. Be sure to cover the pizza tightly with plastic wrap or aluminum foil to prevent it from drying out.

Freezing - I've found that scrambled eggs do not freeze well, so this is not a recommended option for storing your breakfast pizza. It's best to make it fresh each time.

Reheating - For best results, reheat in the oven at 350°F for about 10 minutes or until heated through. You can also use the microwave, but this may result in a softer crust.

Feel free to bake the biscuit crust and cook the sausage gravy the night before to save time in the morning. Then, all you need to do is scramble the eggs and assemble the pizza for a quick and easy breakfast.

Ingredients

  • 2 cans refrigerated biscuits grands 8 count in each can
  • 2 cups sausage gravy
  • 2 Tablespoons unsalted butter
  • 6 large eggs
  • cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded Colby cheese
  • 1 small onion chopped
  • ½ cup bacon pieces

Serve with:

  • Chopped onions

Instructions

  • Preheat oven to 425F.

  • Lightly spray a jelly roll baking sheet (for thick pizza) or a half baking sheet (for a thinner crust) with cooking oil.

  • Open the biscuits cans and arrange biscuits on the baking dish.

  • Press with your handset mend them into one large crust.

  • Bake in the oven for 5-7 minutes or until it starts to get very light brown on the edges.

  • Meanwhile, in a medium bowl which together eggs, milk with some salt and pepper.

  • In a large skillet over medium heat, melt butter pour in egg mixture and gently scramble. Slowly move the eggs using a spatula until softly scrambled and fluffy.

  • Take the crust out, spread the gravy on top evenly then top with scrambled eggs.

  • Top the eggs with the cheese and then sprinkle the bacon on top evenly.

  • Return to the middle rack of your oven abd bake for another 6-7 minutes.

  • Cut and serve with some chopped onions or belle peppers if desired.

Notes

  • We like our pizza thick so I use a jelly roll size pan (15” x 10”)
  • You can add onions on top of the pizza and bake or serve them raw on the side. Or maybe not at all, it is to your personal preference.
